My new fruit/veggie recipes

I definately have not used this blog in a long time. I blame Facebook! After Facebook, I blame Pinterest! I also have a small home business (girlfrosting.com) and a homemade gift idea blog (thehomemadegift.com) as hobbies to keep me from using this blog.
So, I am here in a desire to keep track of some discoveries I find. I am currently on a juicing/fruit and veggie change in my life and I have been searching and discovering some great recipes. I would like to keep track of what ideas I have for various produce.
My new favorite uses:

Bananas = 1 ingredient banana ice cream (really 2 ingredients because I toss in some mini chocolate chips)

Cauliflower = mashed cauliflower (so close to mashed potatoes)

Brussel Sprouts = cut in half, toss in oil and roast. Add kosher salt and lemon juice. YUM!

Plantain Chips = slice a plantain thin, season, bake in covection oven at 450 for about 15 min.
